Make Perfect Elderflower Cordial: Easy Recipe & Foraging Tips

Owain, our landlord, takes pride in making his own elderflower cordial. Whether you want something refreshing on a warm day or a sparkling cocktail for a get-together, this cordial does the trick. Owain’s Elderflower Cordial Recipe
Ingredients:
- 20-25 elderflower heads (freshly picked—just avoid the ones near busy roads)
- 1.5 litres of water
- 1.5kg granulated sugar
- 2 unwaxed lemons (sliced)
- 50g citric acid (you can get this at most chemists or online)
Method:
- Give the elderflower heads a gentle shake to remove any bugs. Don’t wash them—you’ll lose some of the flavour.
- Boil the water in a big pan. Take it off the heat and stir in the sugar until it’s dissolved.
- Add the elderflower heads, lemon slices, and citric acid to the pan.
- Cover it up and leave it in a cool, dark spot for 24-48 hours.
- Strain the mix through a muslin cloth or fine sieve into sterilised bottles.
- Store in the fridge and use within a month—or freeze it if you want it to last longer.
You can mix this cordial with sparkling water, lemonade, or prosecco. Throw in some mint or lime if you’re feeling fancy.
